It's just cruel that bikini season hits right when we're dying for cones and sundaes. Now you can stop breaking a sweat every time the Mister Softee truck rolls by. Here are four super cool treats for when the temps go sky-high.

Mini Ice Cream Sandwiches
Serves 4

1/2 cup light vanilla ice cream (or frozen yogurt), softened at room temperature
24 vanilla wafer cookies (1 1/2 inches in diameter)
1 oz dark (or bittersweet) chocolate (60 to 70 percent cocoa solids), finely chopped

Line a shallow storage container with waxed paper. Put a small scoop of ice cream (about 2 tsp) on a cookie; top with another cookie. Roll sandwich in chocolate so chips adhere to ice cream. Place in container. Repeat with remaining ingredients until you have 12 mini ice cream sandwiches. Cover container and place in the freezer to set for at least 30 minutes, or freeze for up to 1 week.
THE SKINNY 220 calories for 3 sandwiches, 8 g fat (3 g saturated), 35 g carbs, 1 g fiber, 4 g protein

Peanut Butter, Chocolate and Banana Fro Yo
Serves 4

2 containers (6 oz each) nonfat vanilla Greek yogurt, divided among ice cube tray sections and frozen
2 small ripe bananas, cut into
1/2-inch pieces and frozen
4 tsp natural peanut butter
4 tsp mini chocolate chips
Cinnamon (optional)

In a blender or food processor, blend yogurt cubes and bananas on high, scraping down sides every minute, until mixture holds together, 3 minutes. Add peanut butter; blend on high until mixture is creamy, like soft-serve ice cream. Stir in chips. Serve immediately, sprinkled with cinnamon, if desired.
THE SKINNY 159 calories per 1/2 cup, 4 g fat (1 g saturated), 19 g carbs, 2 g fiber, 10 g protein

Neopolitan Ice Cream Pie
Serves 8

9 graham crackers
2 tablespoons melted butter
1 1/2 cups nonfat strawberry frozen yogurt, softened
1/2 Heath bar, broken into small pieces
1 1/2 cups mint ice cream, softened
1 1/2 cups crushed Oreo cookies
1 1/2 cups nonfat chocolate frozen yogurt, softened
2 fresh strawberries, halved

Combine crackers and butter in a food processor. Press mixture into a 9" deep-dish pie pan to form crust. Chill in freezer for 20 minutes. Remove; spread strawberry frozen yogurt over crust. Sprinkle Heath bar on top. Freeze until firm. Remove. Spread a layer of mint ice cream over frozen yogurt; sprinkle 1 cup Oreos on top. Freeze until firm. Spread a layer of chocolate frozen yogurt on ice cream; freeze until firm. Sprinkle remaining 1/2 cup Oreos on top. Garnish each slice with strawberries.
THE SKINNY 286 calories per serving, 9.3 g fat (4.1 g saturated), 47.5 g carbs, 2.2 g fiber, 5.7 g protein

And one for the road…
McDonald's Vanilla Reduced Fat Ice Cream Cone The Golden Arches isn't known for its ice cream, but we think it should be. The smooth soft-serve option tastes decadent, but it cuts 17 g saturated fat and 79 g sugar compared with other restaurant versions, coming in at a lean 170 calories and 4.5 grams fat. Give it a swirl this summer!
